Stuffed Peppers

We don’t eat much around here anymore. It’s not hard to choose what to eat when you only get 400 calories per meal to meet our 1200 calorie a day goal. So when we do eat we make it count….most of the time.

There will always be those days when I choose to eat three stale Easter cookies intead of a meal. Aaaaaahh!! why do I do that to myself?!

Anyway. Here is a great recipe I grew up with. And you all MUST try it.

Ingredients

3-4 Small green peppers

2 cups rice cooked

1/2 pound ground beef cooked

1 can stewed diced tomatoes. I used Italian and I blended them to make them a little less chunky.

1/2 cup chopped onion

1/2 cup chopped mushroom

1 tsp. Worcestershire sauce (pronunciation on this....don't ask)

2 slices low fat pepper jack cheese

salt and pepper to taste.

Combine all ingredients except cheese and stuff the peppers tightly bake at 375 degrees for 30 minutes. Top with pepper jack cheese and let that melt. Serve HOT! We ate ours with a little bit of salsa too it was wonderful. 450 calories calculated by My Fitness Pal. For one pepper. Very filling and satisfying.

Ooooh sounds yummy! Stuffed peppers is one of my favorite dinners to make...never tried w Worcestershire sauce tho. What a cute blog:)

Thanks for the easy recipe. I have red peppers and my husband wants to each stuffed peppers (which I've never made). All the recipes I found called for ingredients I don't keep in my pantry because I don't use them often enough. I was looking for an easy recipe and you have it.

I am excited to make it. thanks for sharing.
